Happy Friday! I just wanted to share my dinner with you that I prepared last night. The recipe is originally from The Healthy Little Hippie. Laura’s recipe looked delish so I couldn’t not try it for myself!
Please excuse my horrible pictures (and lack of pictures) but this is how mine ended up.
In addition to the original recipe I added some honey for sweetness and used dried chilli instead of fresh. All in all it tasted great and the smell of the onion frying in the coconut oil was to die for! I also used mince instead of chicken breast, thigh or tenderlion as it was all I had on hand. Next time I make this however I will definitely be using one of those as the mince was good but didn’t work as well as what I think breast, tenderlion or thigh would.
